Ingredients

  • 500 g skinless cod, haddock or pollock fillets
  • 50 g plain flour (all-purpose flour)
  • 2 eggs, beaten
  • 100 g panko breadcrumbs
  • 1 tbsp olive oil, or oil spray
  • salt and black pepper
  • 1 lemon, cut into wedges
  • 300 g frozen peas, to serve · can skip

Method

  1. Pat the fish dry and cut it into fingers about 2 cm wide.
  2. Put the flour, seasoned with salt and pepper, the beaten eggs and the panko into three shallow bowls.
  3. Coat each finger in flour, then egg, then panko, pressing the crumbs on firmly. Brush or spray lightly with oil.
  4. Heat the air fryer to 200°C / 400°F. Cook the fingers in a single layer, in batches if needed, for 8 to 10 minutes, turning halfway, until golden and the fish is opaque and flakes in the middle.
  5. Cook the peas, if using, while the fish is in. Serve with lemon wedges.
