  • 50 g caster sugar (superfine sugar)
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 175 g plain flour (all-purpose flour)
  • 100 g cold butter, cubed
  • 75 g demerara or light brown soft sugar
  • 50 g rolled oats · can skip
  • custard, cream or ice cream, to serve · can skip

Method

  1. Heat the oven to 190°C / 375°F.
  2. Toss the apples with the caster sugar, cinnamon and lemon juice and spread them in a baking dish of about 2 litres.
  3. Rub the butter into the flour with your fingertips, or pulse in a food processor, until it looks like coarse breadcrumbs.
  4. Stir in the demerara sugar and the oats, if using.
  5. Scatter the crumble loosely over the apples without pressing it down.
  6. Bake for 35 to 40 minutes, until the top is golden and the juices are bubbling at the edges.
  7. Leave it to stand for 10 minutes before serving, as the fruit is very hot.
