Ingredients

  • 500 g beef mince (ground beef)
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 2 tbsp tomato purée (tomato paste)
  • 8 taco shells or small soft tortillas
  • 4 ripe tomatoes, finely diced
  • ½ red onion, very finely chopped
  • 1 lime, juiced
  • ½ head iceberg lettuce, shredded
  • 100 g Cheddar, grated
  • salt and black pepper
  • ½ tsp chilli powder · can skip
  • 1 bunch fresh coriander (cilantro), chopped · can skip

Method

  1. Heat the oil in a large frying pan over a medium-high heat. Cook the onion for 5 minutes, then add the mince and brown it for 6 to 8 minutes, breaking it up, until no pink remains.
  2. Stir in the garlic, cumin, paprika, oregano and chilli powder, if using, for a minute. Add the tomato purée and 100 ml of water and simmer for 5 minutes, until saucy but not wet. Season.
  3. For the salsa, mix the tomatoes, red onion, lime juice, coriander, if using, and a pinch of salt.
  4. Warm the taco shells or tortillas following their packet.
  5. Put everything on the table and let everyone fill their own with beef, lettuce, salsa and cheese.
