Ingredients

  • 300 g red lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, finely chopped
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tin chopped tomatoes (400 g)
  • 1½ L gluten-free vegetable stock
  • 1 lemon, juiced
  • salt and black pepper
  • 1 tsp chilli flakes · can skip

Method

  1. Warm the oil in a large pan over a medium heat and cook the onion and carrots for 8 minutes, until soft.
  2. Stir in the garlic and cumin and give it another minute.
  3. Add the lentils, tomatoes and stock. Bring it to the boil, then turn it down and simmer for 20 to 25 minutes, until the lentils have collapsed.
  4. Season with salt and pepper, then stir in the lemon juice, which is what makes it taste finished.
  5. Add the chilli flakes if your household likes heat.
  6. It thickens as it stands, so loosen it with a splash of water when you reheat it.
